Ingredients
-
10 cups popped popcorn (about 1/2 cup unpopped)
-
1 cup brown sugar
-
1/2 cup light corn syrup
-
1/2 cup (1 stick) unsalted butter
-
1/2 cup sweetened condensed milk
-
1 tsp vanilla extract
-
1/4 tsp salt
Instructions
-
Pop the Popcorn: Prepare popcorn and place it in a large bowl. Discard unpopped kernels.
-
Make the Caramel: In a medium saucepan, combine brown sugar, corn syrup, butter, and sweetened condensed milk. Cook over medium heat, stirring constantly, until the caramel thickens and turns golden (about 8–10 minutes).
-
Finish the Caramel: Remove from heat and stir in vanilla extract and salt.
-
Combine: Pour caramel over the popcorn and gently mix with a spatula until all popcorn is evenly coated.
-
Shape: Let cool slightly. Grease your hands with butter or oil, then shape the mixture into balls.
-
Cool & Set: Place on parchment paper and let them cool completely before serving or wrapping.
Notes
Grease hands or wear food-safe gloves when shaping.
Add-ins like peanuts, pretzels, or dried cranberries are great for flavor and texture.
Work quickly before the caramel sets.
Wrap in wax paper or cellophane for gifting.
