Description

Delicate, buttery, and melt-in-your-mouth tender, these Whipped Shortbread Cookies are a holiday classic. With just six simple ingredients, they come together effortlessly and are perfect for gifting or sharing at festive gatherings.

Ingredients

  • ¾ cup (12 tablespoons or 1½ sticks) unsalted butter, softened

  • 6 tablespoons powdered sugar (spooned and leveled)

  • 1 teaspoon almond extract or vanilla extract

  • 1⅓ cups all-purpose flour (spooned and leveled)

  • 6 tablespoons cornstarch (spooned and leveled)

  • ¼ cup Christmas sprinkles (nonpareils, jimmies, etc.) for decoration

Instructions

  • Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.

  • In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.

  • Add the almond or vanilla extract and mix until combined.

  • Gradually add the all-purpose flour and cornstarch, mixing until just combined.

  • Using a tablespoon or cookie scoop, portion out the dough and roll into balls.

  • Place the dough balls onto the prepared baking sheet, spacing them about 1 inch apart.

  • Gently press the top of each cookie with a fork or your fingers to slightly flatten.

  • Sprinkle the tops with Christmas sprinkles.

  • Bake for 12–15 minutes, or until the edges are lightly golden.

  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a lighter texture, ensure the butter is softened but not melted.

Feel free to experiment with different extracts, such as lemon or orange, for a unique flavor twist.

These cookies can be stored in an airtight container at room temperature for up to a week.

For longer storage, freeze the baked cookies in a single layer on a baking sheet, then transfer to a freezer-safe container for up to 3 months.
