  • 1 eggplant, diced
  • 1 zucchini, diced
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 can (14 oz) of diced tomatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Fresh basil, chopped for garnish

Instructions

  • In a large pan, heat olive oil over medium heat.
  • Add onion and garlic and sauté until fragrant.
  • Add eggplant, zucchini, and bell peppers to the pan. Cook until the vegetables are slightly tender.
  • Stir in the diced tomatoes, thyme, oregano, salt, and pepper. Cover the pan and let it simmer for 15–20 minutes, or until the vegetables are fully tender and the flavors are well combined.
  • Garnish with fresh chopped basil before serving.
