  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together the buttermilk, oil, egg, red food coloring, vanilla extract, and vinegar.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Allow the cupcakes to cool completely on a wire rack before frosting.

For the Frosting:

  1. Beat the softened cream cheese and butter together until smooth and creamy.
  2. Gradually add the powdered sugar, a little at a time, and continue to beat until the frosting is fluffy.
