A gorgeous combination of two delicious desserts – red velvet and cheesecake. The rich, creamy cheesecake contrasts perfectly with the soft, vibrant red velvet cake layers, creating a festive and indulgent treat for Valentine’s Day.

Ingredients

For the Red Velvet Cake:

  • Butter: Softened
  • Granulated Sugar
  • Eggs
  • All-Purpose Flour
  • Cocoa Powder
  • Baking Powder
  • Baking Soda
  • Salt
  • Red Food Coloring
  • Vanilla Extract
  • Buttermilk
  • Vinegar

For the Cheesecake Layer:

  • Cream Cheese: Softened
  • Granulated Sugar
  • Eggs
  • Vanilla Extract
  • Sour Cream or Heavy Cream
  • (Optional: Lemon juice for a little tang)

For the Crust:

  • Graham Cracker Crumbs
  • Granulated Sugar
  • Butter (melted)

Instructions

  • Prepare the Red Velvet Cake:
    • Preheat your oven to 350°F (175°C). Grease and line a springform pan with parchment paper.
    • In a bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
    • In a separate bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Add the red food coloring and vanilla extract.
    • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, mixing until smooth. Stir in the vinegar.
    • Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely.
  • Prepare the Cheesecake Layer:
    • In a large bowl, beat the softened cream cheese until smooth. Add sugar and mix until combined. Add eggs, one at a time, mixing after each addition. Stir in the vanilla extract and sour cream (or heavy cream).
    • Pour the cheesecake batter over the cooled red velvet cake layer and smooth it out.
  • Prepare the Crust:
    • Combine the graham cracker crumbs, sugar, and melted butter. Press this mixture evenly into the bottom of the pan.
    • If the pan already has the red velvet layer, pour the crust on top, then bake the cheesecake at 325°F (163°C) for about 50-60 minutes, or until the center is set but still slightly jiggly.
  • Cool and Chill:
    • Let the cheesecake cool to room temperature before refrigerating it for at least 4 hours or overnight.
  • Serve:
    • Once chilled, slice and enjoy! You can top with whipped cream, sprinkles, or even a drizzle of chocolate.

Notes

  • Make sure the cheesecake layer is fully set before cutting into it.
  • You can decorate the top with Valentine’s Day themed toppings like heart-shaped sprinkles or chocolate ganache.
