Instructions
- Prepare the Red Velvet Cake:
- Preheat your oven to 350°F (175°C). Grease and line a springform pan with parchment paper.
- In a bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a separate bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Add the red food coloring and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, mixing until smooth. Stir in the vinegar.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely.
- Prepare the Cheesecake Layer:
- In a large bowl, beat the softened cream cheese until smooth. Add sugar and mix until combined. Add eggs, one at a time, mixing after each addition. Stir in the vanilla extract and sour cream (or heavy cream).
- Pour the cheesecake batter over the cooled red velvet cake layer and smooth it out.
- Prepare the Crust:
- Combine the graham cracker crumbs, sugar, and melted butter. Press this mixture evenly into the bottom of the pan.
- If the pan already has the red velvet layer, pour the crust on top, then bake the cheesecake at 325°F (163°C) for about 50-60 minutes, or until the center is set but still slightly jiggly.
- Cool and Chill:
- Let the cheesecake cool to room temperature before refrigerating it for at least 4 hours or overnight.
- Serve:
- Once chilled, slice and enjoy! You can top with whipped cream, sprinkles, or even a drizzle of chocolate.
Notes
- Make sure the cheesecake layer is fully set before cutting into it.
- You can decorate the top with Valentine’s Day themed toppings like heart-shaped sprinkles or chocolate ganache.
