Ingredients

Scale

For the Chocolate:

  • 8 oz high-quality dark chocolate (70% cocoa or your preference)
  • 4 oz milk chocolate (optional for a creamier texture)
  • 2 tbsp unsalted butter
  • 2 tsp vanilla extract

Optional Fillings (choose one or more):

  • ½ cup raspberry puree or strawberry puree (for a fruity center)
  • ¼ cup chopped nuts (almonds, hazelnuts, or walnuts)
  • 2 tbsp caramel sauce (for a gooey center)
  • 2 tbsp peanut butter (for a creamy filling)
  • ¼ cup crushed freeze-dried strawberries (for a tangy twist)

Toppings (optional):

  • Edible gold flakes (for an elegant touch)
  • Sprinkles (heart-shaped or your favorite colors)
  • Sea salt (to enhance the chocolate flavor)

Instructions

  • Melt the chocolate:
Break the dark and milk chocolate into pieces and place them in a heatproof bowl. Melt the chocolates using a double boiler method or microwave in short bursts, stirring in between, until smooth and fully melted. Add the butter and vanilla extract and stir until combined.
  • Prepare the molds:
Lightly grease or line a chocolate mold or silicone mold with parchment paper (for easy removal). You can also use a muffin tin if you don’t have a mold. If you’re creating heart-shaped chocolates for Valentine’s Day, be sure to use a heart-shaped mold.
  • Fill the molds:
Pour a small amount of melted chocolate into each mold cavity, just enough to cover the bottom. If using a filling, spoon a small amount of your chosen filling into the center of each chocolate mold. Be careful not to overfill, as the chocolate should completely cover the filling.
  • Add the final layer:
Top the filling with more melted chocolate to completely cover it. Tap the mold gently on the counter to remove any air bubbles and ensure the chocolate is evenly spread.
  • Chill the chocolates:
Place the filled mold in the refrigerator for at least 30 minutes to allow the chocolates to set. If using a silicone mold, you may want to freeze them for a quicker set.
  • Remove and decorate:
Once the chocolates have hardened, carefully remove them from the mold. If desired, decorate with edible gold flakes, heart-shaped sprinkles, or a light sprinkle of sea salt for extra flavor and visual appeal.
  • Serve and enjoy:
Serve these Valentine’s Day chocolates in a pretty box or on a decorative platter. They make a perfect gift or a sweet treat to enjoy with your loved ones

Notes

  • If you don’t have a mold, you can use a baking sheet lined with parchment paper and spoon the chocolate into small blobs for a more rustic chocolate treat.
  • These chocolates can be stored in an airtight container at room temperature for up to a week or in the refrigerator for up to two weeks
