A healthy, hearty, and satisfying one-pan meal, the Turkey Sweet Potato Skillet combines lean ground turkey, sweet and tender chunks of sweet potato, and a medley of colorful vegetables. Packed with protein and fiber, it’s naturally gluten-free and perfect for meal prep, quick weeknight dinners, or comforting, wholesome eating with minimal cleanup. Ready in under 40 minutes!


Ingredients

  • 1 lb ground turkey

  • 2 medium sweet potatoes, peeled and diced

  • 1 medium onion, chopped

  • 2 bell peppers (any color), chopped

  • 2 cloves garlic, minced

  • 12 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp cumin

  • ½ tsp chili powder (adjust to taste)

  • Salt, to taste

  • Black pepper, to taste

  • 2 cups spinach or kale (optional)

  • Fresh parsley or cilantro, chopped (for garnish)


Instructions

  • Prep Ingredients: Dice sweet potatoes, chop onion and peppers, and mince garlic.

  • Cook Turkey: Heat olive oil in a large skillet over medium heat. Add ground turkey, breaking it apart as it cooks. Cook until browned.

  • Add Veggies: Stir in onion, bell peppers, and garlic. Cook for 3–5 minutes until softened.

  • Add Sweet Potatoes and Spices: Add diced sweet potatoes, paprika, cumin, chili powder, salt, and pepper. Stir well to coat.

  • Simmer: Cover and cook for 10–15 minutes, stirring occasionally, until sweet potatoes are fork-tender. Add a splash of water if needed.

  • Add Greens: Stir in spinach or kale until just wilted.

 

  • Garnish and Serve: Top with fresh herbs and serve warm.

Notes

Dice sweet potatoes small for quicker, even cooking.

Add a splash of broth if the pan gets dry.

Optional toppings: shredded cheese, avocado slices, Greek yogurt, or a fried egg.

For spice lovers: add jalapeños or red pepper flakes.

Great as taco filling or over rice/quinoa for a fuller meal.
