Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 bell peppers (any color), chopped

2 cloves garlic, minced

1–2 tbsp olive oil

1 tsp paprika

1 tsp cumin

½ tsp chili powder (adjust to taste)

Salt, to taste

Black pepper, to taste

2 cups spinach or kale (optional)

Fresh parsley or cilantro, chopped (for garnish)
Instructions

Prep Ingredients: Dice sweet potatoes, chop onion and peppers, and mince garlic.

Cook Turkey: Heat olive oil in a large skillet over medium heat. Add ground turkey, breaking it apart as it cooks. Cook until browned.

Add Veggies: Stir in onion, bell peppers, and garlic. Cook for 3–5 minutes until softened.

Add Sweet Potatoes and Spices: Add diced sweet potatoes, paprika, cumin, chili powder, salt, and pepper. Stir well to coat.

Simmer: Cover and cook for 10–15 minutes, stirring occasionally, until sweet potatoes are fork-tender. Add a splash of water if needed.

Add Greens: Stir in spinach or kale until just wilted.

Garnish and Serve: Top with fresh herbs and serve warm.
Notes
Dice sweet potatoes small for quicker, even cooking.
Add a splash of broth if the pan gets dry.
Optional toppings: shredded cheese, avocado slices, Greek yogurt, or a fried egg.
For spice lovers: add jalapeños or red pepper flakes.
