- 2 1/2 cups All-Purpose Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup Butter, softened
- 1 cup Granulated Sugar
- 1 cup Brown Sugar, packed
- 1 cup Peanut Butter
- 1 large Egg
- 2 tsp Vanilla Extract
- 1 cup Reese’s Peanut Butter Cups, chopped (for extra chocolatey peanut butter flavor)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine flour, baking soda, and salt. Set aside.
- In another bowl, beat together butter, granulated sugar, brown sugar, and peanut butter until smooth and creamy.
- Add the egg and vanilla extract, and mix until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Gently fold in chopped Reese’s Peanut Butter Cups.
- Drop tablespoon-sized portions of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
- Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Be sure not to over-bake the cookies. They’ll continue to firm up as they cool.
- You can substitute crunchy peanut butter for a different texture, or use mini Reese’s cups for smaller bites.
