- 6 chicken thighs (or sausage for a more flavorful twist)
- 1½ tsp mixed herbs
- 2 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tbsp olive oil
- 1 cup onion (chopped; any type of onion works)
- 1 tbsp butter
- 3 cups low-sodium chicken stock
- Salt and pepper to taste
- ½ cup green onions (for garnish; optional substitutions: chives, parsley, or coriander)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken thighs (or sausage) with mixed herbs, smoked paprika, onion powder, garlic powder, salt, and pepper.
- Brown the chicken thighs in the skillet for about 4-5 minutes per side. If using sausage, slice it and brown it in the pan.
- Add the chopped onion and cook until softened (about 3 minutes).
- Stir in the butter and allow it to melt.
- Add chicken stock to the skillet, then bring to a simmer and cook until the chicken is fully cooked (about 10-12 minutes).
- While the chicken is cooking, prepare the basmati rice according to package instructions.
- Once the chicken is done, add spinach to the skillet and cook until wilted.
- Serve the chicken and spinach mixture over the rice.
- Garnish with green onions or your preferred herb.
