  • 1½ cups uncooked basmati rice
  • 6 chicken thighs (or sausage for a more flavorful twist)
  • 1½ tsp mixed herbs
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 cup onion (chopped; any type of onion works)
  • 1 tbsp butter
  • 3 cups low-sodium chicken stock
  • Salt and pepper to taste

 

  • ½ cup green onions (for garnish; optional substitutions: chives, parsley, or coriander)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken thighs (or sausage) with mixed herbs, smoked paprika, onion powder, garlic powder, salt, and pepper.
  • Brown the chicken thighs in the skillet for about 4-5 minutes per side. If using sausage, slice it and brown it in the pan.
  • Add the chopped onion and cook until softened (about 3 minutes).
  • Stir in the butter and allow it to melt.
  • Add chicken stock to the skillet, then bring to a simmer and cook until the chicken is fully cooked (about 10-12 minutes).
  • While the chicken is cooking, prepare the basmati rice according to package instructions.
  • Once the chicken is done, add spinach to the skillet and cook until wilted.
  • Serve the chicken and spinach mixture over the rice.

 

  • Garnish with green onions or your preferred herb.

Notes

  • You can substitute the chicken with sausage or even ground beef for a different flavor.
  • For extra creaminess, you can stir in a bit of heavy cream or Parmesan cheese at the end.
