6 cups Chex cereal (corn, rice, or wheat)

2 cups mini pretzels

1 cup nuts (pecans or almonds)

½ cup unsalted butter

1 cup light brown sugar (packed)

¼ cup light corn syrup

1 tsp vanilla extract

½ tsp baking soda

½ cup chocolate chips or candies (optional, added after cooling)
Instructions

Mix the dry ingredients – In a large mixing bowl or roasting pan, combine Chex cereal, pretzels, and nuts.

Make the toffee – In a saucepan, melt butter, then stir in brown sugar and corn syrup. Bring to a boil and simmer for 3–4 minutes, stirring constantly.

Add flavorings – Remove from heat and stir in vanilla and baking soda (mixture will foam).

Coat the mix – Pour the toffee over the cereal mixture and gently stir to coat evenly.

Heat to crisp – Microwave in 90-second intervals for 5 minutes total, stirring in between; or bake at 250°F (120°C) for 45 minutes, stirring every 15 minutes.

Cool and finish – Spread the mixture onto parchment paper to cool. Once cool, add chocolate chips or candies, if using.
Notes
Customize with your favorite nuts or cereals.
For nut-free, replace nuts with more pretzels or Chex.
Add a pinch of cinnamon or pumpkin spice to the toffee for a cozy twist.
