Description

Toffee Chex Mix is a dangerously addictive sweet-and-salty snack loaded with crunchy Chex cereal, buttery homemade toffee, and mix-ins like pretzels, nuts, and optional chocolate.   • 6 cups Chex cereal (corn, rice, or wheat)

  • 2 cups mini pretzels

  • 1 cup nuts (pecans or almonds)

  • ½ cup unsalted butter

  • 1 cup light brown sugar (packed)

  • ¼ cup light corn syrup

  • 1 tsp vanilla extract

  • ½ tsp baking soda

  • ½ cup chocolate chips or candies (optional, added after cooling)


Instructions

  1. Mix the dry ingredients – In a large mixing bowl or roasting pan, combine Chex cereal, pretzels, and nuts.

  2. Make the toffee – In a saucepan, melt butter, then stir in brown sugar and corn syrup. Bring to a boil and simmer for 3–4 minutes, stirring constantly.

  3. Add flavorings – Remove from heat and stir in vanilla and baking soda (mixture will foam).

  4. Coat the mix – Pour the toffee over the cereal mixture and gently stir to coat evenly.

  5. Heat to crisp – Microwave in 90-second intervals for 5 minutes total, stirring in between; or bake at 250°F (120°C) for 45 minutes, stirring every 15 minutes.

  6. Cool and finish – Spread the mixture onto parchment paper to cool. Once cool, add chocolate chips or candies, if using.

Notes

Customize with your favorite nuts or cereals.

For nut-free, replace nuts with more pretzels or Chex.

Add a pinch of cinnamon or pumpkin spice to the toffee for a cozy twist.
