Description

These mini empanadas are a savory and sweet delight! A perfectly spiced filling of ground beef, green olives, raisins, and aromatic seasonings is wrapped in a golden, crispy dough shell. These bite-sized treats are sure to be a hit at your next party or family gathering.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup green olives, chopped
  • 1/4 cup raisins
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 packages of empanada dough

Instructions

  • In a large skillet, cook the ground beef until browned. Add the onion and garlic, and cook until softened.
  • Stir in the green olives, raisins, cumin, paprika, salt, and pepper. Cook for another 5 minutes.
  • Preheat the oven to 375°F (190°C).
  • Roll out the empanada dough and cut into circles.
  • Spoon the beef mixture onto each circle of dough, fold in half, and seal the edges.
  • Place the empanadas on a baking sheet and bake for 20-25 minutes, or until golden brown.

Notes

  • If you prefer a spicier filling, you can add some chopped jalapeños or chili flakes to the mixture.
  • You can substitute ground beef with ground chicken or turkey for a lighter version.
  • These empanadas can also be made ahead and frozen before baking. Just bake them straight from the freezer for an extra few minutes.
