These mini empanadas are a savory and sweet delight! A perfectly spiced filling of ground beef, green olives, raisins, and aromatic seasonings is wrapped in a golden, crispy dough shell. These bite-sized treats are sure to be a hit at your next party or family gathering.

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup green olives, chopped
- 1/4 cup raisins
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 packages of empanada dough
Instructions
- In a large skillet, cook the ground beef until browned. Add the onion and garlic, and cook until softened.
- Stir in the green olives, raisins, cumin, paprika, salt, and pepper. Cook for another 5 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the empanada dough and cut into circles.
- Spoon the beef mixture onto each circle of dough, fold in half, and seal the edges.
- Place the empanadas on a baking sheet and bake for 20-25 minutes, or until golden brown.
Notes
- If you prefer a spicier filling, you can add some chopped jalapeños or chili flakes to the mixture.
- You can substitute ground beef with ground chicken or turkey for a lighter version.
- These empanadas can also be made ahead and frozen before baking. Just bake them straight from the freezer for an extra few minutes.
