  • 4 carrots, peeled and sliced

  • 4 cloves garlic, minced

  • 8 cups low-sodium chicken broth

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper, to taste

  • 8 ounces egg noodles

  • Fresh parsley, chopped (for garnish)


Instructions

  • In a large pot, add chicken breasts, carrots, celery, onion, garlic, chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil over medium-high heat.

  • Once boiling, reduce the heat to a simmer. Let the soup simmer for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

  • Remove the chicken breasts from the soup and shred them using two forks. Return the shredded chicken to the pot.

  • Add the egg noodles and cook for 6-8 minutes, or until the noodles are tender.

  • Taste and adjust seasoning with more salt and pepper if necessary.

 

  • Serve hot, garnished with fresh parsley.
