Ingredients

1 pound boneless, skinless chicken breasts

4 carrots, peeled and sliced

3 stalks celery, sliced

1 onion, diced

4 cloves garlic, minced

8 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

8 ounces egg noodles

Fresh parsley, chopped (for garnish)
Instructions

In a large pot, add chicken breasts, carrots, celery, onion, garlic, chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to a simmer. Let the soup simmer for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

Remove the chicken breasts from the soup and shred them using two forks. Return the shredded chicken to the pot.

Add the egg noodles and cook for 6-8 minutes, or until the noodles are tender.

Taste and adjust seasoning with more salt and pepper if necessary.
