- 1 lb beef tenderloin, cut into bite-sized pieces
- 1 large onion, sliced
- 1/4 cup blue cheese crumbles
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add the sliced onions and cook until caramelized, about 15-20 minutes. Remove from the skillet and set aside.
- Season the beef tenderloin pieces with salt and pepper.
- In the same skillet, add more olive oil if needed and cook the beef tenderloin pieces until browned on all sides, about 5-7 minutes.
- Add the caramelized onions back to the skillet with the beef and stir to combine.
- Sprinkle blue cheese crumbles over the beef and onions, allowing the cheese to melt slightly.
- Remove from heat and serve hot. Enjoy!
