Description

  • 1 lb beef tenderloin, cut into bite-sized pieces
  • 1 large onion, sliced
  • 1/4 cup blue cheese crumbles
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat olive oil over medium-high heat.
  • Add the sliced onions and cook until caramelized, about 15-20 minutes. Remove from the skillet and set aside.
  • Season the beef tenderloin pieces with salt and pepper.
  • In the same skillet, add more olive oil if needed and cook the beef tenderloin pieces until browned on all sides, about 5-7 minutes.
  • Add the caramelized onions back to the skillet with the beef and stir to combine.
  • Sprinkle blue cheese crumbles over the beef and onions, allowing the cheese to melt slightly.
