Ingredients

Scale

For the Cookies:

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice (optional, for added brightness)
  • ½ cup freeze-dried strawberries (crushed into powder)
  • ¼ cup chopped fresh strawberries (optional for extra texture)

For the Glaze (optional):

  • ½ cup powdered sugar
  • 1 tbsp fresh lemon juice
  • 1 tbsp milk (or more, to reach desired consistency)
  • 1 tsp vanilla extract

Instructions

  • Prepare the cookie dough:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Cream the butter and sugar:
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the egg, vanilla extract, and lemon juice (if using), and beat until combined.
  • Add the dry ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the crushed freeze-dried strawberries and fresh chopped strawberries (if using).
  • Shape the cookies:
Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet about 2 inches apart. Gently press down each cookie to flatten slightly.
  • Bake the cookies:
Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Make the glaze (optional):
In a small bowl, whisk together the powdered sugar, lemon juice, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled cookies for an extra touch of sweetness.
  • Serve and enjoy:
Once glazed, the cookies are ready to enjoy! Serve with a cup of tea or coffee for the perfect treat.

Notes

  • For a stronger strawberry flavor, you can substitute the freeze-dried strawberries with strawberry extract or more fresh strawberries.
  • The glaze is optional, but it adds a nice shine and extra sweetness to the cookies.
  • If you prefer a thicker glaze, reduce the amount of milk. For a thinner glaze, add more milk until you reach the desired consistency.
