- 2 tbsp Butter
- 1 Onion, finely diced
- 2 cloves Garlic, minced
- 2 stalks Celery, chopped
- 1 cup Heavy cream
- 3 cups Seafood or chicken broth
- 2 medium Potatoes, diced
- 4 Crusty bread rolls or sourdough loaves
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the bread bowls: Hollow out the crusty bread rolls or sourdough loaves, leaving the outer crust intact to create a bowl. Set aside.
- Cook the seafood: In a large pot, melt the butter over medium heat. Add the seafood (shrimp, crab, clams, or scallops) and cook for 3-5 minutes until just cooked through. Remove the seafood and set aside.
- Sauté vegetables: In the same pot, add the onion, garlic, and celery. Sauté for about 3-4 minutes until softened and fragrant.
- Add broth and potatoes: Pour in the seafood or chicken broth and add the diced potatoes. Bring to a simmer and cook for 10-15 minutes until the potatoes are tender.
- Add cream: Stir in the heavy cream and return the seafood to the pot. Let everything heat through for an additional 3-5 minutes.
- Assemble: Spoon the seafood soup into the hollowed-out bread bowls and garnish with freshly chopped parsley. Serve warm and enjoy!
