Description

Ingredients

  • Chicken breasts or thighs

  • Corn (grilled, roasted, or canned)

  • Cooked rice (white, brown, or cauliflower)

  • Mayonnaise

  • Sour cream or Greek yogurt

  • Lime juice

  • Chili powder

  • Paprika

  • Garlic powder

  • Cotija or feta cheese

  • Cilantro

  • Jalapeños (optional)

  • Green onions

  • Salt and pepper


Instructions

  • Cook the rice according to package instructions and set aside.

  • Season the chicken with chili powder, paprika, garlic powder, salt, and pepper. Cook in a skillet or grill until fully done, then slice or shred.

  • In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, and a pinch of salt to create the street corn sauce.

  • Char or grill corn until lightly browned, then mix with some of the sauce and crumbled cotija cheese.

  • Assemble the bowls by layering rice at the bottom, then topping with chicken, corn mixture, and additional sauce.

 

  • Garnish with cilantro, green onions, jalapeños, and more cotija cheese. Squeeze fresh lime juice on top if desired.

Notes

Marinate the chicken for at least 30 minutes to enhance flavor.

Don’t overmix the sauce with corn—leave some for drizzling over the top.
