Ingredients
Scale
For the Crust:
- 1 cup graham cracker crumbs
- 2 tablespoons sugar
- 1/4 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon rose water (or rose syrup, for a stronger rose flavor)
- 2 large eggs
- 1/4 cup sour cream (optional, for extra creaminess)
- 1/2 cup fresh strawberries, pureed
For the Strawberry Topping:
- 1/2 cup fresh strawberries, diced
- 2 tablespoons honey or maple syrup (optional, for sweetness)
- 1 teaspoon lemon juice
- Fresh rose petals for garnish (optional, for a romantic touch)
Instructions
- Prepare the crust:
Preheat the oven to 325°F (163°C). In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are well coated.- Press the mixture into the bottoms of 6-8 mini cheesecake pans or muffin tins, creating an even layer. Bake for about 5-7 minutes, or until golden brown. Remove from the oven and let cool.
- Make the cheesecake filling:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the sugar and vanilla extract, then mix until well combined.- Add the rose water (or rose syrup) and the pureed strawberries, then mix again until smooth.
- Add the eggs one at a time, beating well after each addition. Stir in the sour cream (if using) for extra creaminess.
- Pour the cheesecake batter evenly over the cooled crusts, filling each about 3/4 full.
- Bake the cheesecakes:
Bake for 18-20 minutes, or until the edges are set but the center is still slightly jiggly. Let the cheesecakes cool to room temperature, then refrigerate for at least 3-4 hours or overnight to fully set. - Prepare the strawberry topping:
In a small bowl, combine the diced strawberries, honey (or maple syrup), and lemon juice. Stir and let sit for about 10 minutes to macerate, releasing the strawberry juices. - Assemble and serve:
Once the cheesecakes have chilled and set, spoon the macerated strawberries on top of each cheesecake.- Optionally, garnish with fresh rose petals for a romantic touch.
- Serve chilled and enjoy these delightful Valentine’s Day treats!
Notes
- For a more intense rose flavor, you can add a bit more rose water or rose syrup, but be careful not to overpower the other flavors.
- If you prefer a more traditional cheesecake, you can skip the rose water and stick to vanilla extract for the filling.
- These mini cheesecakes are perfect for portion control and easy to serve for a party or intimate dinner.
