Instructions
- Prepare the crust:
Crush 10 Oreo cookies into fine crumbs using a food processor or a plastic bag and rolling pin. Mix the crumbs with melted butter. Spoon a layer of the mixture into the bottom of serving cups (about 6-8 individual cups), pressing down firmly to form the crust. - Make the cheesecake filling:
In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until well combined. - Assemble the cups:
Spoon the cheesecake mixture on top of the Oreo crust in each cup, smoothing the top with a spoon or spatula. - Prepare the strawberries:
Dice the fresh strawberries and toss them in sugar. Let them sit for about 10-15 minutes to macerate and release their juices. - Top the cups:
Spoon the macerated strawberries onto the cheesecake layer. Optionally, crush the remaining 2 Oreo cookies and sprinkle over the top for extra crunch. - Chill and serve:
