These Strawberry Cheesecake Cookies are a delightful blend of creamy cheesecake and sweet strawberry flavors. Soft, chewy, and dusted with powdered sugar, they make the perfect treat for any occasion. The strawberry puree gives them a vibrant color and a fruity kick, making these cookies irresistible!

Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup strawberry puree
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup powdered sugar (for rolling)

Instructions

  1. In a large mixing bowl, cream together the butter and cream cheese until smooth.
  2. Add the granulated sugar, strawberry puree, and vanilla extract. Mix until well combined.
  3. Gradually add the flour and salt, mixing until a dough forms.
  4. Cover the dough and refrigerate for at least 1 hour to firm it up.
  5. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  6. Scoop tablespoon-sized balls of dough and roll them in powdered sugar.
  7. Place the dough balls on the prepared baking sheet and flatten them slightly.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool before serving.

Notes

  • Strawberry puree: For best results, use fresh or frozen strawberries blended into a smooth puree. You can also use store-bought puree if in a pinch.
  • Chill the dough: Chilling the dough helps prevent the cookies from spreading too much while baking.
  • Storage: Store in an airtight container for up to 3-4 days, or freeze for longer storage.
