Tender chicken breasts are filled with a creamy spinach and cheese mixture, then seared and baked to golden perfection. 4 boneless, skinless chicken breasts

1 tablespoon olive oil

2 cups fresh spinach (or 1 cup cooked and drained)

½ cup cream cheese, softened

¼ cup grated Parmesan cheese

½ cup shredded mozzarella cheese

2 cloves garlic, minced

½ teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Toothpicks (for securing chicken)
Instructions

Preheat Oven: Preheat oven to 375°F (190°C).

Prepare the Filling:
In a skillet over medium heat, sauté spinach with a small drizzle of olive oil until wilted. Remove from heat.
In a bowl, mix cooked spinach, cream cheese, Parmesan, mozzarella, and garlic until creamy and combined. -
Stuff the Chicken:
Slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
Stuff each with the spinach-cheese mixture and secure with toothpicks if needed. -
Season the Chicken:
Rub each breast with olive oil, then sprinkle with salt, pepper, and paprika. -
Sear (Optional but Recommended):
Heat a skillet over medium-high heat and sear each side of the stuffed chicken breasts for 2–3 minutes to get a golden crust. -
Bake:
Transfer to a baking dish or oven-safe skillet and bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
Notes
Add red pepper flakes for a spicy kick.
You can substitute frozen spinach (thawed and drained) if fresh isn’t available.
Goat cheese or feta also work great in the filling.
Great served with roasted vegetables, rice, or a simple green salad.
