Ingredients

For the Crust

  • Graham Cracker Crumbs: Ground graham crackers form the base of this cheesecake.

Instructions

  • Prepare the Crust: Preheat the oven to 325°F (163°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a greased 9-inch springform pan. Bake for 10 minutes, then remove and set aside to cool.
  • Make the Cheesecake Filling: In a large bowl, beat softened cream cheese and sugar until smooth and creamy. Add in the sour cream and vanilla extract, then beat in the eggs one at a time until fully incorporated.
  • Add Marshmallows: Gently fold in mini marshmallows into the cheesecake batter.
  • Bake the Cheesecake: Pour the cheesecake batter onto the cooled crust. Bake for 50-55 minutes, until the edges are set but the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  • Chill the Cheesecake: Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight.
  • Toast the Marshmallows: Just before serving, preheat your broiler. Sprinkle mini marshmallows on top of the cheesecake and broil for 1-2 minutes until toasted and golden brown.
