  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 package (8 oz) cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil (optional, for searing)
  • Fresh basil, chopped (for garnish)

Instructions

  • Prepare the Chicken: Season the chicken breasts with garlic powder, Italian seasoning, salt, and black pepper. Optional: Sear the chicken breasts in a hot pan with olive oil for 2-3 minutes per side for extra flavor and color.
  • Add to Slow Cooker: Place the seasoned chicken breasts in the slow cooker.
  • Prepare the Sauce: In a medium bowl, mix the cream cheese with the drained diced tomatoes. Stir in ½ cup of shredded mozzarella cheese and season with a pinch of salt and pepper.
  • Cook: Pour the creamy tomato mixture over the chicken breasts in the slow cooker. Cover and cook on low for 4-5 hours or until the chicken is tender and cooked through.
  • Add Mozzarella: About 10 minutes before serving, sprinkle the remaining ½ cup of mozzarella cheese on top of the chicken. Cover and let it melt.

Notes

  • For added flavor, you can add ¼ cup of grated Parmesan cheese to the sauce mixture.
