  • 1 tbsp olive oil

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 zucchini, diced

  • 1 can (14.5 oz) diced tomatoes

  • 2 tbsp tomato paste

  • 4 cups chicken or vegetable broth

  • 1 can (15 oz) red kidney beans, drained and rinsed

  • 1 can (15 oz) cannellini beans, drained and rinsed

  • 1 cup small pasta (ditalini, elbows, or shells)

  • 1 tsp Italian seasoning

  • 1 bay leaf

  • 2 cups fresh spinach or chopped kale (optional)

  • Salt and pepper, to taste

  • Grated Parmesan cheese, for garnish


Instructions

  1. Brown the Sausage: Heat olive oil in a large pot over medium heat. Add sausage, break it into small pieces, and cook until browned.

  2. Sauté the Vegetables: Add onion, garlic, carrots, and celery. Cook for 5–7 minutes until softened.

  3. Build the Broth: Stir in diced tomatoes, tomato paste, Italian seasoning, and bay leaf. Pour in broth and bring to a simmer.

  4. Add Beans and Pasta: Add kidney beans, cannellini beans, and pasta. Simmer for 10 minutes or until pasta is al dente.

  5. Finish with Greens: Stir in spinach or kale, and cook 2–3 minutes until wilted.

  6. Season and Serve: Remove bay leaf, adjust seasoning with salt and pepper. Serve hot, topped with Parmesan cheese.

Notes

  • Make it vegetarian by skipping sausage and using veggie broth.
