Sheet Pan Dinner:

  • 1 (14 oz) sausage link (turkey, chicken, or beef), sliced

  • 2 sweet potatoes, diced into cubes

  • 2 bell peppers, chopped (any colors)

  • ½ red onion, thinly sliced

  • 2 garlic cloves, minced

  • 12 tbsp Italian seasoning

  • 12 tbsp olive oil

Homemade Garlic Aioli:

  • ½ cup mayonnaise

  • 23 garlic cloves, minced

  • 1 tbsp fresh lemon juice

  • ¼ tsp salt

  • ⅛ tsp black pepper


Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.

  2. In a large bowl, combine sweet potatoes, bell peppers, red onion, minced garlic, Italian seasoning, and olive oil. Toss to coat.

  3. Spread the veggies out on the baking sheet and roast for 15 minutes.

  4. Remove from oven, add sliced sausage to the sheet pan, and toss everything together.

  5. Return to oven and roast for another 15–20 minutes, or until veggies are tender and sausage is browned.

  6. Meanwhile, in a small bowl, whisk together mayo, garlic, lemon juice, salt, and pepper to make the aioli.

  7. Serve the roasted sausage and vegetables with a drizzle of garlic aioli or as a dip on the side.

Notes

Use pre-cooked sausage for faster prep. Raw sausage should be cooked separately before slicing.

Add a drizzle of honey over the roasted dish before serving for a sweet-savory combo.

The aioli can be made ahead and stored in the fridge for up to 3 days.
