  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz. cream cheese, softened

Instructions

  • Soak the pineapple: In a shallow bowl, combine the dark rum and coconut rum. Add the pineapple rings and soak for about 30 minutes to an hour, allowing the pineapple to absorb the rum flavors.
  • Prepare the coating: In a medium bowl, whisk together the flour and a pinch of salt. In another bowl, beat the eggs and coconut milk until smooth. Spread the coconut flakes on a plate.
  • Coat the pineapple: Remove the pineapple rings from the rum mixture and dip each ring into the flour mixture, followed by the egg mixture, and then into the coconut flakes, pressing gently to ensure an even coat.
  • Fry the pineapple: In a large skillet, heat vegetable oil over medium heat. Fry the pineapple rings in batches for about 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon to remove the fried pineapple and place it on paper towels to drain excess oil.
  • Make the frosting: While the pineapple is frying, make the cream cheese frosting. In a small bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.

 

  • Serve: Arrange the fried pineapple rings on a platter. Drizzle or spread the cream cheese frosting over the warm pineapple rings and serve immediately.

Notes

  • For a non-alcoholic version, you can skip the rum and soak the pineapple in fruit juice or pineapple juice.
  • You can also serve these with a scoop of vanilla ice cream or whipped cream for extra indulgence.
