Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, and cocoa powder.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, buttermilk, and red food coloring until fully incorporated.
- Gradually mix in the dry ingredients until a dough forms. If using, fold in the white chocolate chips.
- Press the dough into the prepared cake pan, spreading it evenly.
- Bake for 18-20 minutes, or until the center is set and a toothpick inserted comes out clean.
- Allow the cookie cake to cool in the pan for 10 minutes, then remove it from the pan and cool completely on a wire rack.
- While the cake cools, prepare the cream cheese frosting: Beat together softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and a pinch of salt until creamy.
- Once the cookie cake has cooled, spread the cream cheese frosting on top.
- Decorate with sprinkles, heart-shaped decorations, or fresh berries for a festive touch.
Notes
- If you don’t have buttermilk, you can substitute with regular milk and a teaspoon of lemon juice or vinegar.
