For the Cookie Cake:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons buttermilk
  • 2 tablespoons red food coloring (or gel food coloring)
  • 1 teaspoon vinegar (optional, for extra red velvet flavor)
  • 1/2 cup white chocolate chips (optional, for added texture)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

For Decoration (optional):

  • Sprinkles, heart-shaped decorations, or fresh berries for garnish

Instructions

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, salt, and cocoa powder.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, vanilla extract, buttermilk, and red food coloring until fully incorporated.
  • Gradually mix in the dry ingredients until a dough forms. If using, fold in the white chocolate chips.
  • Press the dough into the prepared cake pan, spreading it evenly.
  • Bake for 18-20 minutes, or until the center is set and a toothpick inserted comes out clean.
  • Allow the cookie cake to cool in the pan for 10 minutes, then remove it from the pan and cool completely on a wire rack.
  • While the cake cools, prepare the cream cheese frosting: Beat together softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and a pinch of salt until creamy.
  • Once the cookie cake has cooled, spread the cream cheese frosting on top.
  • Decorate with sprinkles, heart-shaped decorations, or fresh berries for a festive touch.

Notes

  • If you don’t have buttermilk, you can substitute with regular milk and a teaspoon of lemon juice or vinegar.
  • This cake can be made ahead of time and stored in the fridge for up to 3 days.
  • For extra flair, consider adding red velvet crumbs or crushed cookies on top of the frosting.
