- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt (optional)
- 1 1/2 cups semisweet chocolate chips (for coating)
- 1 tablespoon vegetable oil (to help melt the chocolate)
Instructions
- In a medium-sized bowl, mix the peanut butter, powdered sugar, vanilla extract, and salt (if using) until smooth.
- Roll the peanut butter mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
- Chill the peanut butter balls in the freezer for at least 30 minutes, or until firm.
- In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 20-second intervals, stirring in between, until fully melted and smooth.
- Dip each peanut butter ball into the melted chocolate, coating it completely. Return the coated truffles to the parchment-lined baking sheet.
- Allow the chocolate coating to set by placing the truffles back in the freezer for another 10-15 minutes.
