Description

Potato Chip Chicken offers a delightful twist on traditional baked chicken, combining tender, juicy chicken with the crispy, salty crunch of crushed potato chips. Ingredients

  • 1 cup coarsely crushed potato chips

  • 1 tablespoon minced fresh parsley

  • ½ teaspoon salt

  • ½ teaspoon paprika

  • ¼ teaspoon onion powder

  • 1 pound boneless skinless chicken breast halves

  • 2 tablespoons mayonnaise


Instructions

  • Preheat the oven to 400°F (200°C).

  • In a large resealable plastic bag, combine the crushed potato chips, parsley, salt, paprika, and onion powder.

  • Brush each chicken breast with mayonnaise.

  • Place the mayonnaise-coated chicken breasts into the bag with the chip mixture and shake to coat evenly.

  • Place the coated chicken breasts in a greased baking dish.

 

  • Bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown.

Notes

Ensure the chicken breasts are dry before applying the mayonnaise to help the coating adhere better.

For added flavor, consider using flavored potato chips such as barbecue or sour cream and onion.

Serve with dipping sauces like ranch, honey mustard, or barbecue sauce for added taste.
