For the Cookie Bars:

  • 1 box (3.4 oz) pistachio instant pudding mix

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 1/2 cups granulated sugar

  • 2 large eggs

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

For the Frosting:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 2 cups powdered sugar

  • 1/4 cup milk

  • 1/2 teaspoon vanilla extract

  • 2 tablespoons pistachio pudding mix (instant, dry)


Instructions

  • Preheat Oven & Prepare Pan: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.

  • Make the Cookie Dough: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add in the eggs and vanilla extract, mixing until well combined. Stir in the pistachio pudding mix.

  • Add Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

  • Bake the Cookie Bars: Spread the cookie dough evenly into the prepared baking dish. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Allow the bars to cool completely in the pan on a wire rack.

  • Make the Frosting: While the bars cool, prepare the frosting. Beat together the softened butter, powdered sugar, milk, vanilla extract, and pistachio pudding mix until smooth and creamy.

 

  • Frost the Bars: Once the cookie bars are completely cooled, spread the frosting evenly on top. Cut into squares and serve.

Notes

The bars can be stored in an airtight container at room temperature for up to 3 days.

Feel free to sprinkle crushed pistachios on top of the frosting for added texture and flavor.

For a fun twist, you can also add white chocolate chips to the cookie dough.
