  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 tbsp pink dragon fruit puree
  • Pink food coloring (optional)

Instructions

  • Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Gradually mix in vegetable oil and eggs, one at a time.
  • Add buttermilk, vanilla extract, and pink dragon fruit puree, mixing until well combined.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Divide batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Once cakes are cool, assemble and frost with your favorite frosting, adding pink food coloring if desired.

Notes

  • The pink color of the dragon fruit may vary depending on the variety, so feel free to add pink food coloring to enhance the color if desired.
  • For an added tropical twist, top with coconut flakes or fresh dragon fruit slices.
  • Make sure the cakes are completely cooled before frosting to avoid melting the frosting.
