- 1 cup buttermilk
- 1 tsp vanilla extract
- 2 tbsp pink dragon fruit puree
- Pink food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Gradually mix in vegetable oil and eggs, one at a time.
- Add buttermilk, vanilla extract, and pink dragon fruit puree, mixing until well combined.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Divide batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Once cakes are cool, assemble and frost with your favorite frosting, adding pink food coloring if desired.
Notes
- The pink color of the dragon fruit may vary depending on the variety, so feel free to add pink food coloring to enhance the color if desired.
- For an added tropical twist, top with coconut flakes or fresh dragon fruit slices.
- Make sure the cakes are completely cooled before frosting to avoid melting the frosting.
