1 lb boneless chicken breast or thighs, cut into bite-sized pieces

1 cup fresh or canned pineapple chunks (drained if canned)

1 medium onion, sliced

1 tsp fresh ginger, grated

3 tbsp soy sauce

2 tbsp hoisin sauce

1 tbsp rice vinegar or lime juice

1 tsp cornstarch

1 tbsp brown sugar or honey

2 tbsp cooking oil (canola, peanut, or sunflower)

2 green onions, sliced (for garnish)

Instructions

Prepare the Ingredients:
Dice chicken, pineapple, bell peppers, and onion. Mince garlic and ginger. -
Make the Sauce:
In a bowl, whisk together soy sauce, hoisin sauce, rice vinegar, brown sugar, and cornstarch. Set aside. -
Cook the Chicken:
Heat 1 tbsp oil in a large pan or wok over medium-high heat. Add chicken and cook until golden and cooked through. Remove and set aside. -
Stir-Fry Vegetables:
Add remaining oil to the same pan. Sauté garlic and ginger until fragrant. Add bell peppers and onion. Cook 3–4 minutes until just tender. -
Combine Ingredients:
Return chicken to pan. Add pineapple and pour in sauce. Toss to coat and cook for 2–3 minutes, until sauce thickens. -
Garnish and Serve:
Remove from heat. Garnish with green onions and sesame seeds. Serve hot over rice or noodles.
