14 oz kielbasa sausage, sliced into coins

12 oz pasta (penne, rotini, or shells)

1 tbsp olive oil or butter

1 small onion, chopped

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1/2 cup cream cheese (optional, for extra creaminess)

1 cup shredded cheddar or mozzarella

Instructions

Heat olive oil in a large pot or skillet over medium heat. Add sliced kielbasa and sauté until browned. Remove and set aside.

In the same pot, add chopped onion and sauté until soft, about 3–4 minutes. Add garlic and cook for 30 seconds more.

Add pasta, chicken broth, and heavy cream. Stir to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 10–12 minutes, stirring occasionally.

Once pasta is al dente and liquid mostly absorbed, stir in shredded cheese and cream cheese (if using) until melted and creamy.

Return kielbasa to the pot. Stir well to combine.
