Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat olive oil over medium heat.
  • Add chicken pieces and cook until browned.
  • Add onion and garlic, sauté until fragrant.
  • Stir in bell pepper, zucchini, and cherry tomatoes.
  • Season with oregano, basil, salt, and pepper.
  • Cover and simmer for 15-20 minutes, or until chicken is cooked through.
  • Serve hot and enjoy!

Notes

  • For added flavor, you can sprinkle some grated Parmesan cheese on top before serving.
  • You can also substitute the vegetables with any others you prefer, like mushrooms or spinach.
