- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chicken pieces and cook until browned.
- Add onion and garlic, sauté until fragrant.
- Stir in bell pepper, zucchini, and cherry tomatoes.
- Season with oregano, basil, salt, and pepper.
- Cover and simmer for 15-20 minutes, or until chicken is cooked through.
- Serve hot and enjoy!
Notes
- For added flavor, you can sprinkle some grated Parmesan cheese on top before serving.
- You can also substitute the vegetables with any others you prefer, like mushrooms or spinach.
- If you want extra protein, add some chickpeas or beans to the skillet.
