This creamy and comforting Olive Garden-inspired chicken gnocchi soup is loaded with tender chicken, gnocchi, spinach, and carrots in a rich and velvety broth. It’s a perfect soup for any occasion!

- 1 tablespoon olive oil
- 1 pound chicken breast, diced
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 1 quart half and half
- 1 (14 oz) can chicken broth
- 2 cups spinach, chopped
- 1 cup carrots, shredded
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- 16 oz potato gnocchi
Instructions
- In a large pot, heat olive oil over medium heat and cook chicken until no longer pink.
- Add butter and flour to create a roux, then slowly whisk in the half and half.
- Stir in chicken broth, spinach, carrots, garlic, salt, and pepper.
- Let simmer for 20 minutes, then add gnocchi and cook for an additional 5 minutes.
- Serve hot and enjoy!
Notes
- If you prefer a thicker soup, you can add a bit more flour to the roux.
- You can substitute kale for spinach or add more vegetables if desired.
