Ingredients

  • 1 pound chicken breast, diced
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 quart half and half
  • 1 (14 oz) can chicken broth
  • 2 cups spinach, chopped
  • 1 cup carrots, shredded
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • 16 oz potato gnocchi

Instructions

  • In a large pot, heat olive oil over medium heat and cook chicken until no longer pink.
  • Add butter and flour to create a roux, then slowly whisk in the half and half.
  • Stir in chicken broth, spinach, carrots, garlic, salt, and pepper.
  • Let simmer for 20 minutes, then add gnocchi and cook for an additional 5 minutes.

Notes

  • If you prefer a thicker soup, you can add a bit more flour to the roux.
