- For the Cookie Dough Layer:
- 1/2 cup unsalted butter, softened
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- Pinch of salt
- 1 1/2 cups mini chocolate chips, divided
- For the Coating:
- 16 oz chocolate candy coating or almond bark
- M&M’s for topping
Instructions
- Prepare the Brownie Layer:
- Follow the instructions on the brownie mix box to prepare the brownie batter. Bake the brownies according to the package directions, then allow them to cool completely.
- Make the Cookie Dough Layer:
- In a large mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
- Add the milk and vanilla extract, mixing until combined.
- Gradually add the all-purpose flour and a pinch of salt. Mix until the dough comes together and is smooth.
- Stir in 1 cup of mini chocolate chips.
- Assemble the Bombs:
- Once the brownies have cooled, crumble them into small pieces using your hands or a fork.
- Gently mix the crumbled brownies into the cookie dough mixture until well combined.
- Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Refrigerate the balls for at least 30 minutes to firm up.
- Coat the Bombs:
- While the balls are chilling, melt the chocolate candy coating (or almond bark) according to the package instructions.
- Dip each chilled brownie-cookie dough ball into the melted chocolate coating, ensuring it’s fully covered.
- Place the coated balls back on the parchment-lined sheet and immediately top each one with an M&M or two.
- Allow the chocolate coating to set completely by refrigerating the bombs for another 30 minutes or until firm.
- Serve:
- Once the chocolate coating is set, your No-Bake M&M’s Chocolate Chip Cookie Dough Brownie Bombs are ready to serve! Store any leftovers in an airtight container in the refrigerator.
