Ingredients

Scale
  • For the Brownie Layer:
    • 1 box fudge brownie mix (plus ingredients called for on the back of the box)
  • For the Cookie Dough Layer:
    • 1/2 cup unsalted butter, softened
    • 1/2 cup light brown sugar, packed
    • 1/4 cup granulated sugar
    • 2 tablespoons milk
    • 1 teaspoon vanilla extract
    • 1 1/4 cups all-purpose flour
    • Pinch of salt
    • 1 1/2 cups mini chocolate chips, divided
  • For the Coating:
    • 16 oz chocolate candy coating or almond bark
    • M&M’s for topping

Instructions

  • Prepare the Brownie Layer:
    • Follow the instructions on the brownie mix box to prepare the brownie batter. Bake the brownies according to the package directions, then allow them to cool completely.
  • Make the Cookie Dough Layer:
    • In a large mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
    • Add the milk and vanilla extract, mixing until combined.
    • Gradually add the all-purpose flour and a pinch of salt. Mix until the dough comes together and is smooth.
    • Stir in 1 cup of mini chocolate chips.
  • Assemble the Bombs:
    • Once the brownies have cooled, crumble them into small pieces using your hands or a fork.
    • Gently mix the crumbled brownies into the cookie dough mixture until well combined.
    • Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Refrigerate the balls for at least 30 minutes to firm up.
  • Coat the Bombs:
    • While the balls are chilling, melt the chocolate candy coating (or almond bark) according to the package instructions.
    • Dip each chilled brownie-cookie dough ball into the melted chocolate coating, ensuring it’s fully covered.
    • Place the coated balls back on the parchment-lined sheet and immediately top each one with an M&M or two.
    • Allow the chocolate coating to set completely by refrigerating the bombs for another 30 minutes or until firm.
  • Serve:
    • Once the chocolate coating is set, your No-Bake M&M’s Chocolate Chip Cookie Dough Brownie Bombs are ready to serve! Store any leftovers in an airtight container in the refrigerator.

Notes
