Description

These No-Bake Buckeye Graham Crackers are the ultimate sweet-and-salty treat! Creamy peanut butter filling sandwiched between crisp graham crackers and dipped in rich chocolate—like a cross between s’mores and classic Buckeyes. They’re easy to make, require no oven, and are perfect for snacks, parties, or indulgent cravings!

Ingredients

Scale
  • 1 package (14.4 oz) graham crackers

  • 1 cup creamy peanut butter

  • ½ cup powdered sugar

  • ½ cup brown sugar, packed

  • 1 cup chocolate chips

  • 1 tablespoon coconut oil (optional, for smoother dipping)

  • Additional peanut butter for drizzling (optional)

Instructions

  • Make the Peanut Butter Filling
In a mixing bowl, combine the peanut butter, powdered sugar, and brown sugar. Mix until smooth and well blended.

  • Assemble the Sandwiches
Spread a generous layer of the peanut butter filling onto a graham cracker, then top with another cracker to form a sandwich. Repeat until all crackers are filled.

  • Chill
Place the filled cracker sandwiches in the refrigerator for about 30 minutes to firm up.

  • Melt the Chocolate
In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring between each, until smooth.

  • Dip and Drizzle
Dip each chilled sandwich into the melted chocolate and place on a wax paper-lined baking sheet. Optionally, drizzle with additional peanut butter.

  • Set and Serve
Allow chocolate to set at room temperature or refrigerate until firm. Serve whole or slice into squares.

Variations: Add crushed peanuts, sprinkles, or sea salt before the chocolate sets.
