Ingredients
-
1 package (14.4 oz) graham crackers
-
1 cup creamy peanut butter
-
½ cup powdered sugar
-
½ cup brown sugar, packed
-
1 cup chocolate chips
-
1 tablespoon coconut oil (optional, for smoother dipping)
-
Additional peanut butter for drizzling (optional)
Instructions
-
Make the Peanut Butter Filling
In a mixing bowl, combine the peanut butter, powdered sugar, and brown sugar. Mix until smooth and well blended. -
Assemble the Sandwiches
Spread a generous layer of the peanut butter filling onto a graham cracker, then top with another cracker to form a sandwich. Repeat until all crackers are filled. -
Chill
Place the filled cracker sandwiches in the refrigerator for about 30 minutes to firm up. -
Melt the Chocolate
In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring between each, until smooth. -
Dip and Drizzle
Dip each chilled sandwich into the melted chocolate and place on a wax paper-lined baking sheet. Optionally, drizzle with additional peanut butter.
-
Set and Serve
Allow chocolate to set at room temperature or refrigerate until firm. Serve whole or slice into squares.
