Description

Monterey Chicken Spaghetti is a comforting casserole that combines smoky grilled chicken, creamy cheese, and zesty barbecue flavors. This dish is perfect for family dinners, potlucks, or meal prepping, offering a hearty and satisfying meal.


Ingredients

  • 2 cups cooked, shredded chicken (about 2 chicken breasts)

  • 8 oz cooked spaghetti

  • 1 cup Monterey Jack cheese, shredded (plus extra for topping)

  • ½ cup cheddar cheese, shredded (optional)

  • 1 can (10.5 oz) cream of chicken soup

  • 1 can (10 oz) diced tomatoes with green chilies, drained

  • 1 small onion, finely chopped

  • 1 bell pepper, diced

  • 2 cloves garlic, minced

  • ½ cup sour cream

  • ¼ cup chicken broth (or water)

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp paprika

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 2 tbsp fresh cilantro, chopped (optional for garnish)

  • ½ cup bacon bits (optional for topping)


Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with oil or butter.

  • In a large bowl, combine cooked chicken, barbecue sauce, cream of chicken soup, sour cream, and seasonings (garlic powder, onion powder, salt, and pepper). Mix until well blended.

  • Add cooked spaghetti to the bowl and toss to coat evenly with the sauce mixture.

  • Stir in half of the shredded Monterey Jack cheese and optional cheddar cheese if using.

  • Transfer the mixture to the prepared baking dish and spread it evenly.

  • Top with remaining cheese and sprinkle crumbled bacon over the top.

  • Bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly.

 

  • Remove from oven and garnish with chopped green onions if desired. Let rest for 5 minutes before serving.

Notes

Use rotisserie chicken for convenience and extra flavor.

Slightly undercook pasta to prevent it from becoming too soft during baking.

Mix cheese into the pasta and on top for gooey layers throughout.

Add a drizzle of barbecue sauce before serving for extra zing.

Let the casserole sit for a few minutes after baking to firm up for easier slicing.
