  • 1 cup crushed chocolate sandwich cookies
  • 1/4 cup blue food coloring

Instructions

  • Preheat the oven to 350°F (180°C).
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a separate large bowl, cream together the butter, brown sugar, and sugar until light and fluffy.
  • Beat in the vanilla extract and eggs (or flax eggs) until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chips, crushed cookies, and blue food coloring.
  • Drop tablespoon-sized dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • If you prefer a dairy-free version, swap the butter for coconut oil or another plant-based butter substitute.
  • The blue food coloring can be adjusted depending on how vibrant you want the cookies to be.
