Ingredients

  • 4 black cod fillets (6 oz each)

  • 1/3 cup white miso paste

  • 1/3 cup sake

  • 1/3 cup mirin

  • 1/4 cup brown sugar


Instructions

  • In a saucepan, combine sake and mirin; bring to a boil.

  • Whisk in white miso paste until dissolved.

  • Add brown sugar and cook over moderate heat, whisking until dissolved.

  • Let the marinade cool to room temperature.

  • Place cod fillets in a shallow dish and pour marinade over them, ensuring they’re well-coated.

  • Cover and refrigerate for at least 24 hours, preferably up to 48 hours.

  • Preheat the broiler to high.

  • Remove cod from marinade, letting excess drip off.

  • Place fillets on a foil-lined baking sheet, skin-side down.

 

  • Broil for 10–12 minutes, or until the surface is caramelized and the fish flakes easily
