Ingredients

4 black cod fillets (6 oz each)

1/3 cup white miso paste

1/3 cup sake

1/3 cup mirin

1/4 cup brown sugar
Instructions

In a saucepan, combine sake and mirin; bring to a boil.

Whisk in white miso paste until dissolved.

Add brown sugar and cook over moderate heat, whisking until dissolved.

Let the marinade cool to room temperature.

Place cod fillets in a shallow dish and pour marinade over them, ensuring they’re well-coated.
