Description

Mexican Style Black Bean Soup is the perfect blend of bold flavors, comfort, and heartiness. This dish combines the earthiness of black beans with the vibrant spices and zesty ingredients characteristic of Mexican cuisine. It’s filling, nutritious, and perfect for a weeknight meal, a gathering with friends, or a cozy bowl on a cold day. The combination of garlic, cumin, cilantro, and lime brings the soup to life, giving it that signature Mexican flair.

Ingredients

  • Black beans

  • Onion

  • Garlic

  • Carrot

  • Celery

  • Canned diced tomatoes

  • Vegetable broth (or chicken broth)

  • Cumin

  • Chili powder

  • Olive oil

  • Lime juice

  • Fresh cilantro

  • Jalapeño (optional)

  • Salt and pepper

Instructions

  • Sauté the Vegetables:
Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes. Add minced garlic and cook for another 1-2 minutes, until fragrant.

  • Add Spices:
Stir in cumin and chili powder, letting them toast for a minute to release their flavors.

  • Add Beans and Broth:
Add the black beans, diced tomatoes (with juices), and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20-30 minutes, allowing the flavors to meld.

  • Adjust Seasoning:
Taste and adjust seasoning with salt, pepper, and lime juice. For extra spice, add chopped jalapeño.

  • Garnish and Serve:
Ladle soup into bowls and garnish with fresh cilantro. Serve with lime wedges and tortilla chips or warm tortillas on the side.

Notes

Use Dried Beans: If you prefer dried beans, soak them overnight and cook before adding to the soup.

Blend for Creaminess: For a smoother texture, blend part of the soup using an immersion blender.

Adjust the Heat: For a milder soup, reduce or omit the jalapeño and chili powder. For extra heat, add more jalapeños or hot sauce.

Serve with Sides: Pair the soup with rice, cornbread, or a fresh salad to make it a fuller meal.

Homemade Broth: Homemade vegetable or chicken broth adds extra flavor.
