Description

Mexican Fried Ice Cream is the perfect dessert for a fun and unique treat! It combines crispy, golden brown cornflake coating with creamy, cold ice cream for a delightful contrast in textures. Topped with cinnamon, sugar, and a drizzle of honey, this dessert is a must-try for anyone craving something sweet and indulgent.

Ingredients

Scale
  • 4 scoops vanilla ice cream (or your favorite flavor)
  • 2 cups cornflakes, crushed
  • 1 teaspoon ground cinnamon
  • 1/4 cup sugar
  • 1/2 cup vegetable oil (for frying)
  • 2 tablespoons honey (for drizzling)
  • Whipped cream (optional, for garnish)
  • Maraschino cherries (optional, for garnish)

Instructions

  • Scoop the ice cream into 4 even balls and place them on a baking sheet lined with parchment paper.
  • Freeze the ice cream balls for at least 2 hours or until firm.
  • In a shallow bowl, combine the crushed cornflakes, cinnamon, and sugar.
  • Heat the vegetable oil in a deep frying pan over medium-high heat.
  • Roll each ice cream ball in the cornflake mixture, pressing gently to coat evenly.
  • Once the oil is hot (about 350°F or 175°C), fry each ice cream ball for about 30 seconds to 1 minute, or until golden brown and crispy. Be sure to turn the balls to fry all sides evenly.
  • Remove the fried ice cream balls from the oil and place them on paper towels to drain excess oil.
  • Drizzle with honey, top with whipped cream and maraschino cherries if desired, and serve immediately!

Notes

  • You can use other flavors of ice cream, such as chocolate or cinnamon, to customize the recipe.
  • Serve with a sprinkle of extra cinnamon and sugar for an even more flavorful coating.
  • Be sure to keep the ice cream balls frozen until just before frying to ensure they hold their shape during frying.
