Meatloaf:

  • 1 ½ lbs ground beef (80/20 blend)

  • 1 cup fresh cremini mushrooms, finely chopped

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • ¾ cup breadcrumbs

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried thyme (optional)

  • 1 egg (optional, for binding)

Mushroom Gravy:

  • 1 ½ cups fresh cremini mushrooms, sliced

  • 2 cloves garlic, minced

  • ½ small onion, finely chopped

  • 1 ½ cups beef broth

  • 1 tbsp flour or cornstarch (optional, for thickening)

  • 1 tbsp butter or oil for sautéing

  • Salt and pepper, to taste


Instructions

Meatloaf:

  1. Let ground beef sit at room temperature for 20–30 minutes. Preheat oven to 350°F (175°C).

  2. Finely chop onions and mushrooms.

  3. In a large bowl, gently mix ground beef, onions, mushrooms, garlic, breadcrumbs, Worcestershire sauce, seasonings, and egg (if using).

  4. Test seasoning by cooking a small patty in a skillet.

  5. Shape the meat mixture into a loaf with a slight dome shape. Place it in a heavy-bottomed loaf pan.

  6. Bake for 45–55 minutes, or until internal temperature reaches 160°F (71°C).

  7. Let rest for 15 minutes before slicing.

Mushroom Gravy:

 

  1. In a skillet over medium heat, sauté mushrooms in butter or oil until golden brown.

  2. Add garlic and onions, cook until fragrant and softened.

  3. Stir in beef broth. Simmer for 8–10 minutes, allowing the gravy to reduce and thicken.

  4. For a thicker consistency, whisk in a flour or cornstarch slurry.

  5. Season with salt and pepper to taste.

Notes

Don’t overmix the meat to keep the loaf tender.

A shallow trench on top of the loaf helps catch extra gravy.

Gravy can be made up to 2 days ahead and reheated with extra beef broth.

Leftovers make excellent meatloaf sandwiches.
