Ingredients
Meatloaf:

1 ½ lbs ground beef (80/20 blend)

1 cup fresh cremini mushrooms, finely chopped

¾ cup breadcrumbs

1 tbsp Worcestershire sauce

½ tsp black pepper

1 tsp dried thyme (optional)

1 egg (optional, for binding)
Mushroom Gravy:

1 ½ cups fresh cremini mushrooms, sliced

2 cloves garlic, minced

½ small onion, finely chopped

1 ½ cups beef broth

1 tbsp flour or cornstarch (optional, for thickening)

1 tbsp butter or oil for sautéing

Salt and pepper, to taste
Instructions
Meatloaf:

Let ground beef sit at room temperature for 20–30 minutes. Preheat oven to 350°F (175°C).

Finely chop onions and mushrooms.

In a large bowl, gently mix ground beef, onions, mushrooms, garlic, breadcrumbs, Worcestershire sauce, seasonings, and egg (if using).

Test seasoning by cooking a small patty in a skillet.

Shape the meat mixture into a loaf with a slight dome shape. Place it in a heavy-bottomed loaf pan.

Bake for 45–55 minutes, or until internal temperature reaches 160°F (71°C).

Mushroom Gravy:

In a skillet over medium heat, sauté mushrooms in butter or oil until golden brown.

Notes
