  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 cup cherry tomatoes, halved
  • Fresh basil, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium heat and cook chicken until browned on both sides and cooked through (about 6-7 minutes per side). Remove the chicken from the skillet and set aside.
  3. In the same skillet, add chicken broth, heavy cream, Parmesan cheese, garlic powder, and Italian seasoning. Stir until well combined and bring to a simmer.
  4. Add halved cherry tomatoes to the skillet and cook for 2-3 minutes, allowing them to soften.
  5. Return the cooked chicken breasts to the skillet and let them simmer in the sauce for 10-15 minutes, until the sauce thickens and the chicken is fully cooked.
  6. Garnish with freshly chopped basil before serving.
