Creamy cauliflower, tangy sour cream, rich cream cheese, and sharp cheddar cheese come together with crispy bacon for a dish that’s sure to impress!

- 1 large head of cauliflower, cleaned and trimmed
- 1 cup chicken stock
- 3 cloves garlic, minced
- ½ cup sour cream
- 4 oz cream cheese, softened
- 1 ½ cups shredded sharp cheddar cheese
- 4 slices bacon, cooked crisp and crumbled
- 2 green onions, thinly sliced
- Sea salt and black pepper, to taste
Instructions

Cook the Cauliflower:
- In a large pot, bring the chicken stock to a simmer over medium heat.
- Add the cauliflower florets and minced garlic, cover, and steam for about 10-12 minutes until the cauliflower is tender.

Mash the Cauliflower:
- Once the cauliflower is cooked, drain any excess liquid and transfer the cauliflower to a large bowl.
- Use a potato masher or fork to mash the cauliflower to your desired consistency. For a smoother texture, you can use a hand mixer or food processor.

Add the Creamy Ingredients:
- To the mashed cauliflower, add the sour cream, cream cheese, and half of the shredded cheddar cheese.
- Stir everything together until the mixture is smooth and well combined. Season with sea salt and black pepper to taste.

Prepare the Casserole:
- Preheat your oven to 375°F (190°C).
- Transfer the mashed cauliflower mixture to a greased 9×9-inch or similar-sized baking dish.
- Top with the remaining shredded cheddar cheese.

- Place the casserole in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

- Remove from the oven and sprinkle the top with crumbled bacon and thinly sliced green onions.
