Instructions
- In a small bowl, combine graham cracker crumbs, 2 tbsp sugar, and melted butter. Mix well.
- In another bowl, toss blueberries with 1 tbsp sugar until coated.
- In a separate bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until well combined.
- Gently fold in whipped cream to the cream cheese mixture.
- To assemble, layer graham cracker crumbs, cream cheese mixture, and blueberries in serving glasses.
- Repeat layers for the desired amount of parfaits.
- Chill in the refrigerator for at least 1 hour before serving.
