Ingredients

2 Tbsp olive oil

1 lb mushrooms, sliced

1 small onion, finely chopped

4 Tbsp unsalted butter

3 Tbsp all-purpose flour (gluten-free flour works well too)

1 1/2 to 2 cups chicken broth (low sodium)

4–6 cups leftover turkey meat, torn into bite-sized pieces

1/2 tsp sea salt (or to taste)

1/8 tsp ground black pepper (or to taste)

1 Tbsp parsley (optional, for garnish)
Instructions

Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and chopped onion, cooking until softened, about 5-7 minutes.

Add the butter to the pan and melt. Once melted, sprinkle in the flour and stir, cooking for 1-2 minutes to create a roux.

Gradually whisk in the chicken broth, bringing it to a simmer. Allow the sauce to thicken, about 3-5 minutes.

Add the torn turkey meat, salt, and black pepper to the skillet. Stir to combine, then cook for an additional 5 minutes until the turkey is heated through.

Remove from heat and serve, garnished with parsley if desired.

For a thicker gravy, add more flour or reduce the broth.
