For the Korean Glaze:

  • 1/4 cup soy sauce

  • 2 tablespoons honey

  • 2 tablespoons gochujang (Korean chili paste)

  • 2 tablespoons rice vinegar

  • 2 tablespoons sesame oil

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • 1 tablespoon brown sugar

  • 1 tablespoon sesame seeds (optional, for garnish)

  • 23 green onions, sliced (optional, for garnish)


Instructions

  • Preheat the Oven:

    • Preheat your oven to 400°F (200°C).

  • Prepare the Chicken:

    • Pat the chicken drumsticks dry with paper towels. This helps them crisp up in the oven.

    • Rub the chicken drumsticks with vegetable oil and season with salt and pepper.

  • Make the Glaze:

    • In a small saucepan, combine soy sauce, honey, gochujang, rice vinegar, sesame oil, garlic, ginger, and brown sugar.

    • Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 5 minutes, or until the glaze thickens slightly. Remove from heat and set aside.

  • Bake the Chicken:

    • Place the drumsticks on a baking sheet lined with parchment paper or a silicone baking mat.

    • Bake for 25-30 minutes, flipping halfway through, until the drumsticks are golden brown and cooked through (internal temperature of 165°F or 75°C).

  • Glaze the Chicken:

    • After the chicken is cooked, remove the drumsticks from the oven.

    • Brush the warm glaze generously over the drumsticks. You can return the chicken to the oven for an additional 5-7 minutes to allow the glaze to set and become sticky.

 

  • Serve:

    • Garnish with sesame seeds and sliced green onions (if desired).

Notes

  • Adjust Spice Level: If you prefer a milder glaze, reduce the amount of gochujang or substitute it with chili paste or sweet chili sauce.

  • Grilling Option: You can also grill the drumsticks instead of baking them. Just cook over medium heat for about 25 minutes, flipping and glazing them towards the end of grilling.
