4 bone-in, skin-on chicken thighs

2 tbsp olive oil (or butter)

1 cup heavy cream

1 cup mushrooms, sliced (button or cremini)

3 cloves garlic, minced

1 tbsp fresh thyme (or 1 tsp dried thyme)

1 tbsp chicken broth (optional, for deglazing)

1/4 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped (optional garnish)
Instructions

Season the Chicken: Pat the chicken thighs dry with paper towels and season with salt and pepper on both sides.

Sear the Chicken: Heat olive oil (or butter) in a large skillet over medium-high heat. Once hot, add chicken thighs, skin side down, and cook for 6-7 minutes until the skin is crispy. Flip and cook for another 5-6 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). Remove the chicken from the pan and set aside.

Make the Sauce: In the same skillet, add mushrooms and garlic. Sauté for 3-4 minutes until mushrooms are softened and browned. Add thyme and chicken broth (if using) and cook for another 1-2 minutes.

Creamy Sauce: Reduce heat to low, then pour in the heavy cream. Stir well to combine and let the sauce simmer for 3-5 minutes until thickened. Stir in Parmesan cheese until melted and smooth.

Combine: Return the chicken thighs to the skillet, skin side up, and simmer for another 5 minutes to allow the chicken to reheat and absorb the sauce flavors.

Notes
You can use skinless chicken thighs if you prefer, but skin-on thighs give a richer flavor.
If you want a thicker sauce, reduce the cream further by simmering.
