For the Glaze:
-
½ cup powdered sugar
-
2 tablespoons pineapple juice
Instructions
-
Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
-
In a medium bowl, whisk together the flour, baking powder, and salt.
-
In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy.
-
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
-
Gradually add the flour mixture in three additions, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
-
Fold in the drained crushed pineapple.
-
Pour the batter into the prepared loaf pan and smooth the top.
-
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
-
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
-
In a small bowl, whisk together the powdered sugar and pineapple juice to make the glaze. Drizzle over the cooled cake.
Notes
Ensure the pineapple is well-drained to prevent excess moisture in the cake.
Store the cake in an airtight container at room temperature for up to three days. For longer storage, refrigerate it, or freeze individual slices for up to a month
