Ingredients
Scale
- 2 pounds ground beef, browned and drained
- 1-ounce packet taco seasoning (Use homemade taco seasoning if preferred)
- 16-ounce can large biscuits (Store-bought or homemade biscuit dough)
- ½ cup sour cream (Greek yogurt works as a substitute)
- ½ cup mayonnaise (Light mayo or Greek yogurt can be used)
- 8 ounces cheddar cheese, shredded and divided (Swap with Monterey Jack or Colby cheese)
- 1 medium onion, sliced and halved
- 2 medium tomatoes, sliced
- 1 medium red bell pepper, halved and sliced (Any color bell pepper works)
- 4 ounces canned sliced jalapeño peppers (Adjust for heat preference)
Instructions
- Preheat the Oven
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish. - Cook the Ground Beef
In a large skillet, cook the ground beef over medium heat until browned. Drain the excess fat and stir in the taco seasoning. Follow the seasoning packet instructions, adding water as directed. - Prepare the Biscuits
While the beef is cooking, open the biscuit dough and cut each biscuit into quarters. Set aside. - Layer the Casserole
In the prepared casserole dish, spread the browned ground beef mixture evenly across the bottom. Add a layer of sliced onions, tomatoes, red bell peppers, and jalapeño peppers. - Top with Sour Cream and Mayo
In a small bowl, mix the sour cream and mayonnaise together. Spread this mixture evenly over the vegetables in the casserole dish. - Add the Biscuit Dough
Layer the biscuit dough pieces on top of the sour cream mixture, ensuring they cover the whole surface. - Add Cheese
Sprinkle half of the shredded cheddar cheese over the biscuit dough. - Bake the Casserole
Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and cooked through. During the last 5 minutes of baking, sprinkle the remaining cheddar cheese on top and continue baking until melted and bubbly. - Serve
Once baked, remove the casserole from the oven and let it sit for a few minutes before serving. Garnish with additional fresh vegetables or herbs if desired.
Notes
- Adjust the Heat: For a spicier casserole, add more jalapeños or use a spicier taco seasoning mix.
