  • ½ cup sour cream (Greek yogurt works as a substitute)
  • ½ cup mayonnaise (Light mayo or Greek yogurt can be used)
  • 8 ounces cheddar cheese, shredded and divided (Swap with Monterey Jack or Colby cheese)
  • 1 medium onion, sliced and halved
  • 2 medium tomatoes, sliced
  • 1 medium red bell pepper, halved and sliced (Any color bell pepper works)
  • 4 ounces canned sliced jalapeño peppers (Adjust for heat preference)

Instructions

  • Preheat the Oven
    Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
  • Cook the Ground Beef
    In a large skillet, cook the ground beef over medium heat until browned. Drain the excess fat and stir in the taco seasoning. Follow the seasoning packet instructions, adding water as directed.
  • Prepare the Biscuits
    While the beef is cooking, open the biscuit dough and cut each biscuit into quarters. Set aside.
  • Layer the Casserole
    In the prepared casserole dish, spread the browned ground beef mixture evenly across the bottom. Add a layer of sliced onions, tomatoes, red bell peppers, and jalapeño peppers.
  • Top with Sour Cream and Mayo
    In a small bowl, mix the sour cream and mayonnaise together. Spread this mixture evenly over the vegetables in the casserole dish.
  • Add the Biscuit Dough
